Knowledge
of different types including white, wholemeal, rye, sweet, country, multigrain, sour dough, spelt, mezonia, bagel dough into square and high tin loaves, hotdog rolls, round rolls, plaited rolls, knot rolls, onion rolls, challah bagels, boiled bagels, French sticks, plain and sweet Jewish challahs, pizza base, heavy poppy challahs etc.
- Preparing dough and baking the shaped dough into breads, rolls of different shapes.
- Monitoring oven temperatures and product size and appearance to determine baking times.
- Coordinating the forming, loading, baking, unloading, de-panning and cooling of batches of bread, rolls and pastry products.
- Operating machines that mix, cut, divide, roll and mould dough.
- Emptying, cleaning and greasing baking trays, tins and other cooking equipment.
Qualifications:
- AQF Certificate III including at least two years of on-the-job training, or AQF Certificate IV
Skills and Experience:
- Experience of at least three years in high volume production of baking goods.
- Sound knowledge of all aspects of food safety and hygiene.
- Knowledge of baking different types of baking goods with baking oven.
- Familiar with different types of dough, Jewish bakery products.
- Solid knowledge of creating and following Jewish baking menus.
- Experience in using baking equipment such as mixers, rolling pins, moulder, cutter, divider and ovens.
- Substantial knowledge of improvising on present recipes in order to bring out new flavours.
- Extensive knowledge of raw materials and their uses in baking.
- Recent experience in preparing and baking bread loaves, rolls, Jewish challahs, plaits and buns.
